Minty Kale Salad, perfect for July summers

How’s it going blissies? I’m cat and dog-sitting this week and boy are they a handful! Two cats and two dogs. I couldn’t imagine having this many pets. They are super sweet and cuddly, but it’s hard work having animals.

I ate out a lot last week and weekend so today I was really wanting something light, healthy, and raw. Did you get to try some delish food this weekend? I opted for a massaged kale salad for lunch. Using a Magic Bullet I made a quick mint tahini dressing to massage into the kale. Threw in what veggies and fruit were in the fridge and I had lunch in under 10 minutes.

When I’m making dressings I pretty much just wing it. So the measurements below are estimates. Feel free to add a little of this or that to get a flavor that you like. You want the dressing on the creamy side to coat the kale.

Minty Kale Salad

1 small bunch kale, washed and leaves torn off stem into small pieces
1 cup diced tomato
1/2 cup sliced red pepper
1/2 cup chopped mango

Mint Dressing
Handful fresh mint
1 tablespoon apple cider vinegar
1 tablespoon water
2 teaspoons tahini
1/2 teaspoon maple syrup
Dash sea salt
Dash smoked paprika
Dash coriander
Dash red pepper flakes

Directions:
Blend dressing ingredients until well combined using a blender. Place kale in a large bowl and pour dressing on top. Massage with your hands for about 5 minutes. Toss the rest of salad ingredients with kale and serve.

  1. That Magic Bullet.   Your endorsement of it is one more reason why I'm pretty sure I NEED to get that thing.  Love the vids, btw.  You are great behind the camera Christy.  

    1. I didn't think I needed it, then I asked a few chefs and cookbook authors if they had one. They said is was perfect for dressings and that is what I use it mostly for. Since you have kids it will be great for making small smoothies too!

  2. I just made this for lunch, substituted pear for mango (mine weren't ripe) and added avocado. So good!
