Meatless Monday: Magical Raw Tacos

Today’s Blissful Meatless Monday post was named by an adorable boy at a potluck I went to last Monday. He tried my raw tacos and said there was no other word to describe them but “magical”. My Facebook fan Jill got the idea brewing that I needed some raw tacos for my cookbook and boy was she right! This dish turned out more delicious and beautiful than I could have imagined. They were a big hit at the potluck too. Feel free to top this taco with whatever ingredients you like. Other options for toppings are mushrooms, sprouts, daikon, celery, zucchini, fresh corn, tomatoes, or ginger, and go wild with different fresh herbs.

Magical Raw Tacos

The spread can make a LOT of tacos so feel free to cut the recipe in half or it will keep in the fridge for up to 5 days. Watch a video on how to make these here!

1 head romaine washed
1 carrot thin matchsticks
1 cup cucumber diced small
1 avocado cubed small
6 basil leaves chiffonade

Red Pepper Cashew Spread
1 cup cashews soaked 3 hours
1/4 cup water
1 cup red pepper chopped (about 1 pepper)
3 tablespoons Bragg Liquid Aminos
1 tablespoon maple syrup
1 tablespoon apple cider vinegar
1 lemon zested and juiced
Sea salt, to taste
Cayenne (if you want it spicy)

Directions:
Drain cashews. In a food processor blend cashews with water until fairly creamy about 2 minutes. Add the rest of spread ingredients and blend until smooth. To assemble taco spread red pepper cashew spread on a lettuce leaf and top with a sprinkle of carrot cucumber avocado and basil. Repeat. Serve immediately.

  1. These were great! I did add a bit of cumin just for more of a "taco" flavor. Next time I'm thinking of using part cashew and part almond in the sauce rather than just cashew. It think that would be nice. Thanks for posting!
